I’m going to drop you an EASY small-batch Fudgy Brownie recipe for your weekend treat before I go off to my playdate hosting Saturday morning routine.
You can make this in minutes right now. I made them, Monday I think, and enjoyed them with my PM coffee all week. They’re so good so 🏃♀️ to the kitchen, I bet you have the ingredients.
The recipe makes only 6 so feel free to double it up if feeding a fam.
Small-batch Fudgy Brownie Muffins
Easy, low-sugar, small-batch, naturally sweetened fudgy brownie muffins!
Servings: 6 muffins

- Muffin pan
Ingredients
- 1 ripe banana, mashed (120 g) sub 1/2 cup pumpkin puree or applesauce
- 2 tbsp nut/seed butter (32 g) sub melted butter or oil
- 2 tbsp sugar (24 g) sub granulated sweetener
- 2 tbsp cocoa powder (12 g)
- 1/4 tsp vanilla extract
- 1/4 cup flour (30 g) gf all purpose if desired
- 1/2 tsp baking powder
- pinch of salt
- 2 tbsp chocolate chips (30 g)
Instructions
- Preheat oven to 350F and grease a muffin pan or add liners (I made 6 brownie muffins).
- Mix all but chocolate in a bowl, the batter should be thick but spreadable, if not add 1-2 tsp water.
- Transfer to the muffin pan, sprinkle the chocolate chips.
- Bake 20-25 minutes, less for fudgier brownies. Cool completely. Enjoy!
