Small-batch Fudgy Brownie Muffins

- 1 ripe banana, mashed (120 g) sub 1/2 cup pumpkin puree or applesauce
- 2 tbsp nut/seed butter (32 g) sub melted butter or oil
- 2 tbsp sugar (24 g) sub granulated sweetener
- 2 tbsp cocoa powder (12 g)
- 1/4 tsp vanilla extract
- 1/4 cup flour (30 g) gf all purpose if desired
- 1/2 tsp baking powder
- pinch of salt
- 1 tbsp chocolate chips (14 g)
Preheat oven to 350F and grease a muffin pan or add liners (I made 6 brownie muffins).
Mix all but chocolate in a bowl, the batter should be thick but spreadable, if not add 1-2 tsp water.
Transfer to the muffin pan, sprinkle the chocolate chips.
Bake 20-25 minutes, less for fudgier brownies. Cool completely. Enjoy!
