Heard y’all love lemony things. My lemon mini-batch lemon poppy muffins told me. So I thought you might love these soft chewy cookies too.
Easy, nutritious, and omg do they hit that lemony spot. All you need is some basic pantry stuff like butter, sugar, flour and lemon.
I have tested the recipe with applesauce and milk (even almond milk) and both worked beautifully.

Easy Lemon Sugar Cookies
Servings: 16 cookies

Equipment
- Stand or hand mixer
Ingredients
- 1/4 cup softened (vegan) butter (56 g)
- 1/2 cup sugar (96 g)
- 1 cup flour (120 g) gf all purpose if desired
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tbsp lemon juice
- 2 tsp lemon zest
- 1 tbsp applesauce (15 g) sub (nut) milk or mashed banana
- 1 tsp (optional) lemon extract
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- Use a mixer to cream together the sugar and butter until fluffy.
- Add in remaining ingredients except applesauce.
- Mix on medium speed to to get a shaggy dough, add the applesauce and mix more to get a soft cookie dough.
- Scoop cookie dough and roll into a ball with your hands. Roll in sugar if desired.
- Bake 10 minutes, cool for 5 and enjoy!
