(120 g) gf all purpose if desired

lemon juice

lemon zest

applesauce
(15 g) sub (nut) milk or mashed banana

(optional) lemon extract
Instructions
Preheat oven to 350F and line a cookie sheet with parchment.
Use a mixer to cream together the sugar and butter until fluffy.
Add in remaining ingredients except applesauce.
Mix on medium speed to to get a shaggy dough, add the applesauce and mix more to get a soft cookie dough.
Scoop cookie dough and roll into a ball with your hands. Roll in sugar if desired.
Bake 10 minutes, cool for 5 and enjoy!
