Who could say no to waking up to chocolate covered ice cream vibes? Crack that shell and dig into creamy nutritious oats with this stupidly easy recipe.
A few weeks ago we went to Austin, TX for spring break y’all. My cold and freezing booty’s idea was to check out the city, the Google office, see if I want to relocate. I have given Boston nearly 20 years and I feel like the winters are getting longer and longer.

Well you know me, I went all out and tried my best to cram as much decadent food as possible into a 5 day trip. The highlight of which was a tie between Terry Black’s and Bird Bird Biscuit (apparently one of the top 5 places to eat in America, according to a magazine) Sorry my vegan readers I didn’t get to scout for any amazing vegan spots.
Serves me right for slacking on my plant-based eating though, I came back to an ill-timed lipids test. My cholesterol was borderline elevated!
So I went down a rabbit hole on cholesterol and guess what I found. Not all fiber is created equal, and while I’m going back to being plant-strong again, it doesn’t hurt to add some soluble fiber rich oats to my diet.
That is the long winded back story of my oat-renaissance! Oat-aissance?

Chocolate Magic Shell Overnight Oats
Ingredients
- 1 cup oats (80 g) rolled oats work best
- 1 1/2 cup any milk (360 g) I use unsweetened almond milk
- 3 servings (plant-based) protein powder (about 90 g) use any flavor you like
Magic Shell
- 1/4 cup chocolate chips (45 g)
- 1 tsp coconut oil (5 g) use any oil you like
- 3 tbsp (optional) chopped nuts (21 g) I used peanuts, totally optional but add a little extra fat and fiber and crunch!
Instructions
- Mix all ingredients and distribute into 3 jars. How much milk you need will depend on your protein powder so adjust accordingly.
- Cover and refrigerate at least 4 hours, ideally overnight.
- In the morning melt your chocolate and oil in 30 sec increments in the microwave until all chocolate has melted and smooth.
- (Optional) sprinkle your nuts over the jars if using.
- Pour chocolate over your overnight oats and refrigerate or freeze 10 minutes to set.
- Crack your shell and enjoy!
