Little A and I made these super easy pumpkin oatmeal bars for our friend Camila’s birthday 🥳 We love you girl and we’re so happy we found you.
Btw, recipe inspired by @plantbasedrd who posted something like this and I basically ran to the kitchen to make something like it (who else finds it impossible to follow recipes? 🙋🏻♀️ Even my own sometimes).

Small-batch Pumpkin Oatmeal Bars
Throw these together within minutes in your kitchen and snack for days!

Equipment
- Standard loaf pan
Ingredients
Wet ingredients
- 1/2 cup pumpkin puree (120 g)
- 1/4 cup nut/seed butter (64 g)
- 1/4 cup maple syrup (84 g)
Dry ingredients
- 3/4 cup oats (60 g) rolled or quick
- 1 tsp pumpkin spice (depends on how spicy you want them)
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1/4 cup chocolate chips (45 g)
Instructions
- Preheat oven to 350F and line a standard loaf pan with parchment.
- Whisk together all wet, add all dry, combine. Batter should not be too thick, if so add a little water.
- Stir in chocolate. Pour into pan.
- Bake 30-35 minutes until set.
- Cool before slicing. Enjoy!!
