Btw, recipe inspired byĀ @plantbasedrdĀ who posted something like this and I basically ran to the kitchen to make something like it (who else finds it impossible to follow recipes? šš»āāļø Even my own sometimes).

Small-batch Pumpkin Oatmeal Bars
Throw these together within minutes in your kitchen and snack for days!
Servings: 8 squares

Equipment
- Standard loaf pan
Ingredients
Wet ingredients
- 1/2 cup pumpkin puree (120 gā£)
- 1/4 cup nut/seed butter (64 gā£)
- 1/4 cup maple syrup (84 gā£)
Dry ingredients
- 3/4 cup oats (60 gā£) rolled or quick
- 1 tsp pumpkin spiceā£ (depends on how spicy you want them)
- 1/2 tsp baking powderā£
- 1/8 tsp salt
- 1/4 cup chocolate chips (45 gā£)
Instructions
- Preheat oven to 350F and line a standard loaf pan with parchment. ā£
- Whisk together all wet, add all dry, combine. ā£Batter should not be too thick, if so add a little water.
- Stir in chocolate. Pour into pan.ā£
- Bake 30-35 minutes until set. ā£
- Cool before slicing. Enjoy!!

These were amazing! I added a bit more to my recipe and baked for an extra 10 mins due to that but they didnāt even last 12 hours in my house. They are so delicious
The recipe was a perfect size for two but knowing my husband and treats I just added half more and good thing I did cause they were all gone this morning.

Tried these out and fell in love! I added some vanilla extract and made 2 batches (one for me and one for a coworker). These are great hot or cold. I think I’ll add some more oats the next time I try it, but definitely a recipe worth bookmarking! (PS. Goes great by itself, with coffee, with yogurt, and with ice cream lol)
