Small-batch Pumpkin Oatmeal Bars

Ingredients

Wet ingredients

  • 1/2 cup pumpkin puree (120 g⁣)
  • 1/4 cup nut/seed butter (64 g⁣)
  • 1/4 cup maple syrup (84 g⁣)

Dry ingredients

  • 3/4 cup oats (60 g⁣) rolled or quick
  • 1 tsp pumpkin spice⁣ (depends on how spicy you want them)
  • 1/2 tsp baking powder⁣
  • 1/8 tsp salt
  • 1/4 cup chocolate chips (45 g⁣)

Instructions

  • Preheat oven to 350F and line a standard loaf pan with parchment. ⁣
  • Whisk together all wet, add all dry, combine. ⁣Batter should not be too thick, if so add a little water.
  • Stir in chocolate. Pour into pan.⁣
  • Bake 30-35 minutes until set. ⁣
  • Cool before slicing. Enjoy!!
