Chewy, ridiculously quick and easy peanut butter cookies for all my fellow peanut butter lovers!
Here I am with 4-ish-ingredient crispy on the outside, chewy in the middle peanut butter cookies!
Here are those 4-ish simple ingredients:
- Coconut oil
- Peanut butter
- Maple syrup
- Flour
One-bowl, one-spatula, you. That is all that is required to make these cookies come to existence in your kitchen now.
These stupidly easy cookies (my favorite recipes are what I like to call my “stupidly easy” ones) will be my favorite snack cookie to keep around the house.
You’ll simply combine the ingredients together to make a dough and form balls between your palms. Flatten, make the criss-cross pattern, dust with a little sugar if you want and bake. Stupidly easy they are!
Coconut oil gives them that crunchy exterior, maple syrup makes them chewy in their centers without resorting to refined sugars, whole grains keep your blood sugars stable and peanut butter not only makes them peanut butter cookies but also gives them a little protein boost.
Aren’t these just the perfect snack, before/after a workout, to take on a walk, or to enjoy as a healthy dessert?
And yes they’re a little oversized but what can I say, I like my cookies big!

Small-batch Peanut Butter Cookies
Ingredients
- 1 tbsp coconut oil (14 g) sub (plant) butter
- 2 tbsp peanut butter (32 g)
- 3 tbsp maple syrup (83 g)
- 1/2 cup flour (60 g) gf all purpose if desired
- 1/8 tsp salt
- 1/8 tsp baking soda
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- In a bowl melt your coconut oil (I use the microwave) and add your peanut butter and maple syrup. Mix.
- Add flour, make a little well in the center and add baking soda and salt. Mix the soda into the flour (I use the tip of my spatula). Mix to combine and form the cookie dough.
- Scoop dough, roll between your palms, flatten gently and using a fork make the iconic criss-cross pattern.
- Bake 13 ish minutes until cookies are golden around the edges. The less you manage to bake, the chewier they’ll be in their centers.
- Let them cool and firm up on the cookie sheet before enjoying!
