Clustered granola is my fav snack or even dessert as just a spoonful from a jar. So I figured out a way to make (chocolate-y of course) granola with BIG Clusters.

Instead of binding the granola clusters together with a bunch of sugar (or syrup) I used a little bit of oat flour (or regular flour if you don’t have it) and pack it tight into a baking dish with a small amount of chocolate.



The chocolate chips melt and with just a little help from the flour you’ll get yourself the most clustery clustered granola ever.










It will actually come out of the pan as one giant granola square which you’ll have to break apart after it cools down.
It is totally satisfying.

Small-batch Clustered Granola
Equipment
- 8×8 baking dish
Ingredients
- 2 tbsp coconut oil (28 g) sub any other oil or (plant) butter
- 2 tbsp nut/seed butter (32 g) I used almond butter
- 2 tbsp maple syrup (42 g)
- 1 1/2 cup rolled oats (120 g)
- 1/3 cup flour, gf if desired (40 g) I used oat flour which is 1/2 cup oats ground in a food processor
- 1/4 tsp salt
Mix-ins
- 1/2 cup chopped nuts/seeds (60 g) I used hazelnuts
- 1/3 cup chocolate chips (60 g)
Instructions
- Preheat oven to 250F and line your baking dish with parchment.
- In a medium bowl melt coconut oil (I use the microwave) and blend with nut butter, maple syrup, salt.
- Add your oats, flour, chocolate, nuts and mix to combine.
- Pack this down into the baking dish (make sure to tuck it in to form clusters) and bake 1 hour.
- Let granola cool completely (at least 1 hour) before removing from the baking dish and breaking up into clusters.
- Store in a sealed container. Enjoy!
