Small-batch Clustered Granola

Equipment

  • 8x8 baking dish

Ingredients

  • 2 tbsp coconut oil (28 g) sub any other oil or (plant) butter
  • 2 tbsp nut/seed butter (32 g) I used almond butter
  • 2 tbsp maple syrup (42 g)
  • 1 1/2 cup rolled oats (120 g)
  • 1/3 cup flour, gf if desired (40 g) I used oat flour which is 1/2 cup oats ground in a food processor
  • 1/4 tsp salt

Mix-ins

  • 1/2 cup chopped nuts/seeds (60 g) I used hazelnuts
  • 1/3 cup chocolate chips (60 g)

Instructions

  • Preheat oven to 250F and line your baking dish with parchment.
  • In a medium bowl melt coconut oil (I use the microwave) and blend with nut butter, maple syrup, salt.
  • Add your oats, flour, chocolate, nuts and mix to combine.
  • Pack this down into the baking dish (make sure to tuck it in to form clusters) and bake 1 hour.
  • Let granola cool completely (at least 1 hour) before removing from the baking dish and breaking up into clusters.
  • Store in a sealed container. Enjoy!
