Here is the waffle version of my single-serving vegan buttermilk pancakes, which are an absolute reader favorite, so I’m expecting you to enjoy this version as well.
Now that I’m traveling back home for the summer in Turkey (and my husband’s hometown Bulgaria) and idly walking around big cities, I walk past a waffle shop multiple times a day.
It always reminds me of my fav weekend treat that I had as a college student. Especially right at the end of a big night (typically a metal show, in Istanbul) when a bunch of us drunk and hangry 20 year olds descended on the late night waffle scene and devoured these amazing buffet style waffles.
I would fill mine with nutella, white chocolate, all the fruit (bananas, kiwis, what have you) and then something crunchy like nuts or granola or chocolate chips. Then they will fold this up and hand it to you like a sandwich, except it’s 1000 calories of dessert LOL.
I guess the starving body of a 20 year old could handle the glycogen overload at the time.
I created this recipe so whenever I craved this special treat I can make it at home in mere minutes and either enjoy it for breakfast or share it with my family for dessert — in which case of course don’t forget to top it with all the good stuff, the nutella, the banana, etc.

Single-serving Vegan Buttermilk Waffles
Equipment
- Waffle iron
Ingredients
- 1/3 cup (nut) milk (80 g)
- 1 tsp apple cider vinegar (5 g) lemon juice will work too, or try omitting
- drop of vanilla extract
- 1/3 cup flour (40 g) gf all purpose if desired
- 2 tsp sugar (8 g)
- 1 tsp baking powder
- pinch of salt
- 1/8 tsp (optional) xanthan gum optional but helps waffles be sturdier
Instructions
- In a cup add (nut) milk, vinegar, drop of vanilla and let it sit 5 min.
- In a small bowl whisk together flour, sugar, baking powder, pinch of salt and (optional) xanthan gum if using.
- Pour wet into dry and stir until not clumpy (don't overmix it, tiny clumps are ok).
- Cook waffles on a waffle iron as per instructions.
- Serve with your fave toppings and enjoy!
Notes
- If using self-rising flour omit the baking powder.
- Optional hint: Add 1 tsp oil to your milk or buttermilk to make the waffles even fluffier.
