Mini-batch Matcha Protein Truffles
Servings: 4 truffles
Calories: 83kcal
Ingredients
- 1 tbsp nut/seed butter (16 g)
- 1 tbsp maple syrup (21 g)
- 2 tbsp protein powder (15 g) plant-based if desired, sub oat flour
- 1 tsp matcha powder you could omit this
- 1/4 cup chocolate chips (45 g)
- 1 tsp coconut oil (5 g)
Instructions
- In a cereal bowl combine nut butter, maple syrup, protein powder, matcha powder, pinch of salt. Stir until smooth using hands if necessary. It should come together but if it doesn't add 1 tsp water, if it's too wet add more protein.
- Make balls between your palms and freeze on a sheet of parchment until solid.
- In a bowl melt chocolate and coconut oil stir until smooth (I use 30 sec increments in the microwave).
- Using two forks dip and coat each ball in the chocolate and let it set. There will be chocolate left to dip other things in (I save mine for later and re-melt for other projects).
- Enjoy and keep refrigerated!
