If you’re like me and it makes you very uncomfortable to sit around your house PROJECTLESS for your holiday stay-cation, I got you. Run to the kitchen and whip up this lightened up some low-sugar almond milk nog.
So flavorful without weighing heavy on your tummy. I might just make this one year around.
Dairy-free Almond Milk Nog
Servings: 6 servings

Ingredients
- 3 egg yolks (cook the egg whites for breakfast)
- 2 cups almond milk (480 g)
- 3 tbsp maple syrup or honey (63 g)
- 1/2 tsp ground cinnamon
- pinch of ground cloves
- splash of vanilla extract
Instructions
- In a saucepan whisk together egg yolks, almond milk, maple syrup, cinnamon, cloves.
- Heat mixture on medium heat but make sure it doesnāt even simmer for 15 minutes. I used a candy thermometer and made sure not to bring it up over 165F because otherwise it WILL curdle.
- Once thickened, stir in a splash of vanilla and refrigerate for 2-3 hours.
- Serve with more cinnamon and whip cream.
Notes
- Keeps for a couple of weeks in the fridge!
