Easy Vegan Blueberry Pie Bars

Ingredients
Crust layer
- 1/2 cup applesauce (120 gā£) sub mashed banana
- 2 tbsp coconut oil (30 g)
- 2 tbsp maple syrup (42 gā£)
- 1 cup oats (80 gā£)
- 1 cup almond flour (120 gā£) sub regular (even gf) flour
Filling layer
- 1 cup wild blueberries (280 gā£)
- 2 tbsp coconut sugar (24 gā£)
- 1/4 tsp salt
- 1/2 tsp each of cinnamon, vanilla extract
Instructions
- Preheat oven to 350F and line an 8×8 dish with parchment.ā£
- Combine applesauce, coconut oil, maple syrup, vanilla.ā£
- Whisk together oats, flour, cinnamon, salt. ā£
- Combine the two and press into pan. Bake 10 minutes.ā£
- Top with blueberries, sprinkle sugar, press down and pack it in gently.ā£
- Bake 20 more minutes.ā£
- Let bars cool and set in the fridge (if you can). ā£
