You’re getting this recipe courtesy of my yearly pilgrimage to Europe (being married to a Bulgarian and all).
My fave thing while traveling is to peruse grocery stores. In Sophia everywhere I went was these flapjack bars. Many different brands make them, and so many flavors: Oats and nuts, chocolate orange, strawberry cheesecake, peanut butter banana… you name the flavor, the city provided the flapjack!
I love how these are called flapjacks because in the US what we call a flapjack is like a pancake I guess? And these bars would be called baked oatmeal or granola bars? They’re actually a cross between a baked oatmeal (which is softer and doesn’t quite hold together like a bar) and granola bars (which tend to be quite crunchier). These flapjacks are… unique!
I made them super easy to make too, and small-batch since you wanna bake again with a different variation in a couple of days, I know it.

Small-batch Flapjacks (Oat Bars)

- Standard loaf pan
Ingredients
Flapjacks
- 2 cups oats (160 g) rolled or quick oats, you can sub some of it for shredded coconut as well
- 1/4 cup (plant) butter (56 g) sub coconut oil or nut/seed butter
- 1/4 cup maple syrup (84 g) sub sf syrup if desired
- 1 tsp vanilla extract
- 1/4 tsp salt
Chocolate coating
- 1/3 cup chocolate chips (60 g)
- 1/4 cup any nut/seed butter (64 g)
Instructions
- Preheat oven to 350F and line a standard loaf pan with parchment.
- (Optional) process your oats until coarsely chooped, this will give the bars a more soft baked, less chewy texture.
- In a medium bowl add butter, maple syrup and salt. Microwave 30 sec at a time and stir until well blended. Stir in the oats.
- Press the mixture into the pan. Bake for 15-20 minutes until edges are slightly brown.
- When the flapjacks have mostly cooled, in a small bowl add chocolate coating ingredients.
- Microwave 30 sec at a time, stir until all chocolate is melted and a ganache forms.
- Pour chocolate coating over the cooled flapjacks and freeze/refrigerate to set.
- Slice into 8 squares and enjoy!
Notes
- These bars are definitely sweet enough for breakfast and snacks. If you prefer a dessert flapjack just add 2 tbsp sugar to the bar base and theyāll be just right.
