The best vegan buttermilk pancakes on the internet (I think) and now I’ve nailed the single-serving version.
This week I’ve been obsessed with making mini-batch buttermilk biscuits so I taught myself how to make quick buttermilk from just milk and vinegar. You simply mix them together and let the milk sour for like 5 minutes. And it even works with almond milk! What.
So today is Sunday and I legit jumped out of bed to make buttermilk pancakes. I just had the idea, I may have had it in my dreams. It had to happen. And these pancakes were the best pancakes that happened in my kitchen. You don’t even need an egg and the recipe serves ONE. You are more than welcome.
If feeding a fam, this recipe easily triples, which I’ve also tested so, do it. And LET ME KNOW!
Single-serving Vegan Buttermilk Pancakes
Ingredients
- 1/3 cup (nut) milk (80 g)
- 1 tsp apple cider vinegar (5 g) lemon juice will work too, or try omitting
- drop of vanilla extract
- 1/3 cup flour (40 g) gf all purpose if desired
- 2 tsp sugar (8 g)
- 1 tsp baking powder
- pinch of salt
Instructions
- In a cup add (nut) milk, vinegar, drop of vanilla and let it sit 5 min.
- In a small bowl whisk together flour, sugar, baking powder, pinch of salt.
- Pour wet into dry and stir until not clumpy (don't overmix it, tiny clumps are ok).
- Cook pancakes on medium heat (nonstick pans are life), flipping once they start to bubble.
- Serve with your fave toppings and enjoy!
Notes
- If using self-rising flour omit the baking powder.
- If not using a non-stick pan, make sure to grease your pan generously!
- Optional hint: Add 1 tsp oil to your milk or buttermilk to make the pancakes even fluffier.

I like this recipe for how simple and quick it was to make! It’s awesome being able to make a quick batch on pancakes when the mood strikes.
However, be really careful if using a non-stick pan (or an old worn out one like I did)! The batter sticks like crazy. I had to throw out the first batch because they stuck so badly.
I would make sure to thin out the batter when making them too. The pancakes made with thicker batter came out weird and chewy.

Let me tell you. These pancakes, are a total game changer. I have them nearly every day, using half protein powder and half flour, for the best preworkout meal ever. Theyāre super simple to prep the night before. Throw the wet mix and dry mix together, boom. The best, fluffy pancakes ever. If youāre sleeping on these, I dare you to make them for breakfast, or even dessert, tomorrow. Youāll be just as hooked on them as I am.

I tried baking them with some coconut oil in a non-stick pan and it worked out great.
I was a little nervous at first about the milk and the vinegar, but I could not taste it at all and it actually made a differencešš»
