Is it pie, is it cake, is it cookie? … You try it and tell me!
This recipe happened because I was drooling over the internet one night (as I am most nights) and getting myself into trouble when I should really be sleeping or at least watching Love Island.
I believe I saw this or something else like it and I thought I need it now, but I’m not making a whole 12 batch of this and getting myself into trouble for a week.
Just gonna dip my toes in this apple-y trouble (trouble! trouble!) exactly once and move on.
So this is what I baked. It definitely hit the spot.

Single-serving Apple Pie Cookie Cake
Servings: 1 serving
Calories: 180kcal
Equipment
- 1/2 cup ramekin or similar
Ingredients
Cookie cake batter
- 2 tsp oil (10 g)
- 2 tsp (nut) milk (10 g) I used unsweetened almond milk
- 1 1/2 tsp maple syrup (10 g)
- drop of vanilla extract
- 2 tbsp flour (15 g) gf all purpose if desired
- 1/4 tsp baking powder
- pinch of salt
Filling
- 1/4 small apple, chopped (about 30 g)
- 1 tsp granulated sweetener or sugar (4 g) I used lakanto golden
- dash of cinnamon
Instructions
- Preheat oven to 350F and grease a small ramekin.
- Chop your apple small and toss with sweetener and cinnamon. Set aside.
- In a small bowl, mix together oil, milk, syrup, vanilla well. Add flour, baking powder, pinch of salt, and whisk/fork until well blended. The batter should be thick but spreadable, if not add 1/2 tsp additional milk at a time until it is.
- Transfer your batter to the greased ramekin and add the apples in the middle, pressing down gently.
- Bake 20 min, top with ice cream or whipped cream if you like, and enjoy!
Notes
- The recipe as written is not overly sweet and is perfect for breakfast or to top with some ice cream for dessert. If you want this to be dessert on its own, I would toss the apples with some additional sugar or other granulated sweetener.
