These Mini-Batch Rice Krispies Treats are our latest obsession. They’re the perfect after-dinner treat, and they’re so simple that even my little one can whip them up on her own.
Consider it her official introduction to the world of meal prepping!

Instead of relying on marshmallows and a sticky stovetop situation, this recipe uses a clever combination of nut or seed butter and chocolate chips. Simply melt them together in the microwave, and voilĆ ā you’ve got a gooey, delicious base for your treats.

Ingredients
Wet ingredients
- 2 tbsp nut/seed butter (32 g)
- 2 tbsp white chocolate chips (30 g) df if desired
- 1/2 cup rice crispy cereal (16 g) sub any cereal you like and crush into small flakes (shredded coconut should work too!)
- 1 tbsp (optional) rainbow sprinkles (12 g)
Instructions
- Microwave in 30-second intervals, stirring between each, until melted and smooth. Don't overheat it, you don't want it to melt your mix-ins.
- Stir in the Rice Krispies cereal and your chosen mix-ins.
- Press the mixture into a small, lined dish or mold.
- Refrigerate for at least 30 minutes to allow the treats to set.
- Cut into squares and enjoy!
