Mini-batch Rice Krispies Treats

Equipment

  • Junior loaf pan or muffin pan

Ingredients

Wet ingredients

  • 2 tbsp nut/seed butter (32 g)
  • 2 tbsp white chocolate chips (30 g) df if desired
  • 1/2 cup rice crispy cereal (16 g) sub any cereal you like and crush into small flakes (shredded coconut should work too!)
  • 1 tbsp (optional) rainbow sprinkles (12 g)

Instructions

  • In a small bowl add your nut/seed butter and white chocolate chips.
  • Microwave in 30-second intervals, stirring between each, until melted and smooth. Don't overheat it, you don't want it to melt your mix-ins.
  • Stir in the Rice Krispies cereal and your chosen mix-ins.
  • Press the mixture into a small, lined dish, muffin pan or candy mold.
  • Refrigerate for at least 30 minutes to allow the treats to set.
  • Cut into squares and enjoy!

Notes

  • Here are the 3.75 x 5 inch pans I like to use for my mini-batch bar recipes. You can use any small pan and slice differently, or use muffin tins and make 4 single-serving cups.
