Okay, fellow breakfast cookie addicts, let’s have a heart-to-heart. Familiar with those Belvita breakfast cookies? The ones that promise sustained energy and wholesome goodness? Yeah, those were my downfall.
Every time I’d grab a “family-size” box from Costco, it magically transformed into a “mama-size” box, and I’d single-handedly demolish the entire thing within a week. Needless to say, I don’t buy those boxes anymore. It wasn’t a value deal; it was a one-way ticket to diabetes town.
But instead of wallowing in sadness and self-control failure, I decided to take matters into my own hands. I created a mini-batch recipe that makes just two packets worth of Belvita-inspired cookies. Now, I can enjoy them, satisfy my craving, and move on with my life (until the craving strikes again a few months later).
The Mini-Batch Advantage:
This recipe is perfect for portion control and avoiding those “oops, I ate the whole box” moments. It’s also a great way to experiment with different flavors and mix-ins without committing to a large batch.
Wholesome Goodness:
These cookies are made with oat flour, flax seed meal, and a touch of maple syrup (or honey) for sweetness. They’re also packed with fiber and healthy fats.
Secret Weapon: Protein Bar S’mores:
Here’s a fun twist: I love to make “protein bar s’mores” with these cookies. Just take a quarter of your favorite protein bar (Barebells forever, especially creamy crisp!), place it on top of a cookie, and microwave for 10-15 seconds until softened and gooey. Then, sandwich it with another cookie, gently pressing down. It’s like a s’more, but with a protein boost and a symphony of textures. So good!

Mini-batch Crunchy Breakfast Biscuits
Ingredients
- 1/3 cup flour (40 g) gf all purpose if desired, oat flour works best
- 3 tbsp flax seed meal (20 g) sub more oat flour
- 1 tbsp sugar (12 g) brown/coconut works best
- 1 tsp baking powder
- 1/2 tsp cinnamon
- pinch of salt
- 2 tsp maple syrup (14 g) sub honey or any other syrup
- 2 tsp any oil (8 g) you can probably sub melted (plant) butter or nut/seed butter
- 2-3 tsp water
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- In a medium bowl whisk together flour, flax seed meal, sugar, baking powder, cinnamon, salt.
- Stir in maple syrup, oil and enough water 1 tsp at a time and stir to combine. I needed 2 tsp water, you might need more or less. Using a spatula fold this over a couple of times to make it smooth (don't overwork it).
- On a floured surface or between two pieces of parchment roll the dough out less than 1/4 inch thick and slice or cut cookies, poke the tops with a fork.
- Bake cookies 10-14 minutes until slightly browned (they continue to cook on the cookie sheet out of the oven so don't overcook them).
- Let your cookies cool and enjoy!
Notes
- Sub 1/2 tsp maple syrup for molasses for a deeper flavor.
