Three Chocolate Chip Cookies NOW 🍪🍪🍪 My ultimate mini-batch recipe!
This is how the single-serving scones came into existence guys. I was trying to make small batch cookies. There are no mistakes, only happy accidents!
After many small batches of cookies that ended up being eaten as breakfast scones, here are my small batch chocolate chip cookies. Are these the best cookies you’ve ever had, NO. Sally’s baking addiction probably has a better one 😅 BUT these come together in under 5 minutes, bake 12 minutes and they’re PRETTY DANG GOOD OK 👌 I mean to me they’re indistinguishable from classical ones but I’m no cookie snob. Just somebody who wants fresh cookies in her mouth.

Mini-batch Chocolate Chip Cookies
Ingredients
- 1 tbsp coconut oil, melted (15 g) sub (plant) butter
- 1 tbsp maple syrup (21 g)
- 1/4 tsp vanilla extract
- 1/4 cup flour (30 g) gf all purpose if desired
- 1/4 tsp baking powder
- pinch of salt
- 1 tbsp chocolate chips (15 g)
Instructions
- Preheat oven to 350F and line a cookie sheet with parchment.
- In a bowl, mix, oil, syrup, vanilla until blended.
- In a mug/bowl, whisk together flour, salt, baking powder.
- Gradually add dry to wet and stir, stopping as soon as a soft, non-sticky cookie dough forms (you might not need all the dry mix). Fold in chocolate.
- Shape into 3 balls, flatten gently, bake 12 mins.
- Let cookies cool and enjoy!
