One of my oldest recipes (and one of the first that made me really proud) has a home!

The bars are the easiest thing to throw together and quickly satisfy that apple pie craving, IMO.

They’re the perfect dessert for breakfast, esp with some greek yog for protein.

Easy Apple Pie Bars
Servings: 16 bars

Equipment
- 8×8 baking dish
Ingredients
Crust layer
- 1/2 cup applesauce (120 g)ā£ sub mashed banana or pumpkin puree
- 2 tbsp coconut oil (30 g)
- 2 tbsp maple syrup (42 gā£)
- 1 tsp vanilla extract
- 1 cup oats (80 gā£) rolled or quick
- 1 cup almond flour (120 g)ā£ can sub regular/gf flour
Filling layer
- 2 medium sweet apples, peeled and diced quite small (about 400 gā£)
- 2 tbsp sugar (24 gā£) brown/coconut sugar works best
- 1 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat oven to 350F and line an 8×8 dish with parchment.ā£
- Combine applesauce, coconut oil, maple syrup, vanilla.ā£
- Add oats, flour, dash of cinnamon, pinch of salt. ā£Combine and press into pan. Bake 10 minutes.ā£
- Toss apples with sugar, cinnamon, salt and optional lemon juice/zest. Sprinkle on the crust layer and press down to pack in tightly.
- Bake 30 more minutes.ā£
- Let bars cool and set in the fridge for a few hours, slice and enjoy!
Notes
- I have made these with almond flour and white whole wheat flour, both worked very well (nutrition info is based on almond). Almond flour was a bit more moist and rich tasting but the wheat flour version was very good too!
- These bars are sweet enough for snacks. Increase the amount of sugar in this recipe (in either layer) if you want them ādessert sweetā.

Made these this weekend and they are delicious! The instructions were a bit confusing because the crust layer doesnāt list cinnamon or salt in the ingredients but the directions say to add it to the crust layer. I put 1 tsp cinnamon and a pinch of salt and it turned out ok. Will be making these again for sure!
