Ingredients
Crust layer
1/2cupapplesauce(120 g) sub mashed banana or pumpkin puree
2tbspcoconut oil(30 g)
2tbspmaple syrup(42 g)
1tspvanilla extract
1cupoats(80 g) rolled or quick
1cupalmond flour(120 g) can sub regular/gf flour
Filling layer
2mediumsweet apples, peeled and diced quite small(about 400 g)
2tbspsugar(24 g) brown/coconut sugar works best
1tspcinnamon
1/4tspsalt
Instructions
Preheat oven to 350F and line an 8x8 dish with parchment.
Combine applesauce, coconut oil, maple syrup, vanilla.
Add oats, flour, dash of cinnamon, pinch of salt. Combine and press into pan. Bake 10 minutes.
Toss apples with sugar, cinnamon, salt and optional lemon juice/zest. Sprinkle on the crust layer and press down to pack in tightly.
Bake 30 more minutes.
Let bars cool and set in the fridge for a few hours, slice and enjoy!
Notes
I have made these with almond flour and white whole wheat flour, both worked very well (nutrition info is based on almond). Almond flour was a bit more moist and rich tasting but the wheat flour version was very good too!
These bars are sweet enough for snacks. Increase the amount of sugar in this recipe (in either layer) if you want them “dessert sweet”.
