shredded coconut, divided

coconut oil

maple syrup

Instructions
In a blender process 2/3 cup (60 g) coconut into coconut butter.
Add the oil and syrup and blend more until mostly smooth.
Add the remaining coconut and stir until cookie dough like.
Press into pan with parchment and freeze about 1 hour.
Take out and slice into 18 bars, keep frozen.
Melt chocolate and oil together and dip bars in the mixture. There will be chocolate left to use later.
Freeze again a few minutes to set and enjoy! Keep any leftovers frozen or refrigerated.
