Equipment

  • Standard loaf pan
  • food processor or blender

Ingredients

  • 1 1/3 cup shredded coconut, divided (120 g)
  • 2 tbsp coconut oil (30 g)
  • 2 tbsp maple syrup (42 g)

Chocolate coating

  • 1/2 cup chocolate chips (90 g)
  • 2 tsp coconut oil (10 g)

Instructions

  • In a blender process 2/3 cup (60 g) coconut into coconut butter.
  • Add the oil and syrup and blend more until mostly smooth.
  • Add the remaining coconut and stir until cookie dough like.
  • Press into pan with parchment and freeze about 1 hour.
  • Take out and slice into 18 bars, keep frozen.
  • Melt chocolate and oil together and dip bars in the mixture. There will be chocolate left to use later.
  • Freeze again a few minutes to set and enjoy! Keep any leftovers frozen or refrigerated.
