Single-serving Protein Apple Crisp

Equipment

  • 1/2 cup ramekin

Ingredients

Apple filling

  • 1/2 cup chopped apple (70 g) About 1/2 small apple, you can sub any other fruit you like
  • 1/4 tsp cinnamon
  • drop of lemon juice
  • 1 tbsp (optional) vanilla protein powder (7 g) for additional protein boost, optional

Crisp topping

  • 1/4 cup oats (20 g) rolled or quick
  • 1 tbsp nut/seed butter (16 g) sub 2 tsp oil
  • 1 tbsp vanilla protein powder (7 g)
  • 1 tsp (nut) milk or water (5 g)
  • pinch of salt

Instructions

  • Preheat oven to 350F.
  • Add the apples, cinnamon, lemon juice, (optional) protein and mix to coat all the apples. Add this to the ramekin.
  • In a mug/bowl, mix oats, nut butter, protein, milk/water, pinch salt. This will be crumbly, since it's the crumble, LOL. if it's too dry to stick together at all you can add a drop more milk or water.
  • Add the crumble on top of the apples.
  • Bake 20 min and your oven fresh protein treat or breakfast is ready! Top with some ice cream or whip cream, drizzle nut butter, etc and enjoy!

Notes

  • You can sub other fruit/berries, just make sure they're sweet but otherwise add some additional sweetener or use the tbsp of protein in the bottom layer.
