Ingredients
Pie dough
2tbspmashed ripe banana (about 1/4 large banana)(21 g) sub applesauce or pumpkin puree
1tbspnut/seed butter(16 g) I used peanut butter, yum!
1tbspvanilla protein powder(7 g) plant-based if desired
2tbsprolled oats(10 g)
1/8tspbaking soda
Cream filling
1tbspnut/seed butter(16 g)
1tbspvanilla protein powder(7 g)
Instructions
Preheat oven to 359F and line a baking dish with parchment.
In a small bowl mash your banana, add nut butter, protein powder, oats and baking soda, stir to combine. It should be like oatmeal cookie dough, add a drop of water if it's too crumbly.
Make two cookies on the parchment, flatten gently and bake 12 minutes. Let cool completely.
In a small bowl mix nut butter and protein powder to make the cream filling. It should be spreadable, use some water if you need to get the right consistency.
Make a sandwich with your baked pie halves and refrigerate to set, about 5 minutes.
