Single-serving Oatmeal Protein Pie

Ingredients

Pie dough

  • 2 tbsp mashed ripe banana (about 1/4 large banana) (21 g) sub applesauce or pumpkin puree
  • 1 tbsp nut/seed butter (16 g⁣) I used peanut butter, yum!
  • 1 tbsp vanilla protein powder (7 g) plant-based if desired
  • 2 tbsp rolled oats (10 g)
  • 1/8 tsp baking soda

Cream filling

  • 1 tbsp nut/seed butter (16 g)
  • 1 tbsp vanilla protein powder (7 g)

Instructions

  • Preheat oven to 359F and line a baking dish with parchment.
  • In a small bowl mash your banana, add nut butter, protein powder, oats and baking soda, stir to combine. It should be like oatmeal cookie dough, add a drop of water if it's too crumbly.
  • Make two cookies on the parchment, flatten gently and bake 12 minutes. Let cool completely.
  • In a small bowl mix nut butter and protein powder to make the cream filling. It should be spreadable, use some water if you need to get the right consistency.
  • Make a sandwich with your baked pie halves and refrigerate to set, about 5 minutes.
  • Enjoy!
