Mini-batch Sprinkle Protein Cookies

Equipment

Ingredients

Dry ingredients

  • 1/4 cup flour (30 g) gf all purpose if desired, I used oat flour
  • 1/4 cup vanilla protein powder (30 g) can be vegan, but has to be flavored, I used Orgain vanilla
  • 1/2 tsp baking powder
  • 1/4 tsp (optional) xanthan gum optional but helps cookies be sturdier
  • pinch of salt

Wet ingredients

  • 2 tsp any oil (10 g) I used avocado oil, any neutral oil will work
  • 2 tsp sugar (8 g) I used coconut sugar
  • 2 tbsp (nut) milk (30 g) I used unsweetened almond milk

Mix-in

  • 1 tbsp rainbow sprinkles (12 g)

Instructions

  • Preheat oven to 350F and line a cookie sheet with parchment.
  • In a medium bowl whisk together all dry ingredients (you can just use a fork). Add oil, sugar, mix. Add enough milk gradually to form a cookie dough. If it gets too wet, add some more flour.
  • Fold in the rainbow sprinkles.
  • Make rounds of cookie dough between your palms, flatten gently and place on the baking sheet.
  • Bake for 12-14 minutes until the cookies are slightly golden. Let them cool completely (they will firm up as they cool).
  • Enjoy!
