Mini-batch Protein Cookie Dough

Ingredients

  • 1 tbsp peanut butter (16 g⁣) sub other nut/seed butter
  • 1 tbsp maple syrup (21 g) sub sugar-free syrup
  • 2 tbsp vanilla protein powder (15 g) plant-based if desired
  • 1 tbsp chocolate chips (15 g⁣) df if desired

Instructions

  • In a small bowl add nut butter, maple syrup and a pinch of salt, and mix until evenly combined (microwaving for 10 seconds can help loosen up your nut butter).
  • Add protein and mix. The cookie dough should come together but if too dry add 1/2 tsp water at a time until it does.
  • Fold in chocolate chips.⁣ Press into a pan, or shape by hand using a parchment paper or muffin tin cavity, let it set in the fridge or freezer, about 10-20 min. ⁣
  • Chop into squares if you like. Keep refrigerated and enjoy!
