Mini-batch Golden Grahams S'mores Bars

Equipment

  • small loaf pan or muffin pan

Ingredients

Wet ingredients

  • 1/2 tbsp nut/seed butter, or (plant) butter melted (8 g) I used peanut butter but almond or cashew will be more neutral
  • 1 1/2 oz marshmallows (42 g) vegan if desired, this is about 1 cup chopped or mini marshmallows
  • 3/4 cup graham cereal (30 g) vegan/gf if desired, sub any alternative or chopped graham crackers or cookies
  • pinch of salt

Mix-ins

  • 3 tbsp chopped or mini marshmallows (8 g)
  • 1 tbsp chocolate chips (14 g) df if desired

Instructions

  • In a small bowl add your butter, marshmallows and pinch of salt.
  • Microwave in 30-second intervals, stirring between each, until melted and smooth. Don't overheat it, you don't want it to melt your mix-ins.
  • Stir in the cereal until all cereal is covered (try not to crush the pieces). Similarly stir in your mix-ins.
  • Press the mixture into a small, lined dish or muffin pan.
  • Refrigerate or freeze for at least 30 minutes to allow the treats to set.
  • Cut into squares and enjoy!
