2largesoft medjool dates, pitted and chopped(40 g) about 1/4 cup
1tbspnut/seed butter(16 g) I used peanut butter
3tbsppeanuts(21 g) sub other nuts/seeds
Chocolate coating
1/4cupchocolate chips(45 g)
1tspcoconut oil(5 g)
Instructions
In a bowl mash your chopped dates with a fork. If they're not soft enough to mash, you might want to soak them for 10 minutes in warm water.
Add your nut butter, pinch of salt and a drop of vanilla and mash again to form a smooth dough.
If too dry add a drop of water and mash again. Should be smooth and not too sticky like cookie dough. If too wet, you can add a pinch of oat/almond/coconut flour.
Fold in your peanuts and knead a few times more. Make small bites and shape however you like. I shaped mine like mini snickers bars. Freeze to set, at least 1 hour.
Microwave together chocolate and coconut oil, 30 sec at a time and stir until all chocolate is melted.
Using 1-2 forks dip each frozen piece in chocolate and set on a piece of parchment. Re-freeze or refrigerate to set the chocolate.
