1/4cupflour(30 g) gf all purpose if desired, I used oat flour
1/4cupvanilla protein powder(30 g) can be vegan, but has to be flavored, I used Orgain vanilla
1/2tspbaking powder
1/4tsp(optional) xanthan gumoptional but helps cookies be sturdier
pinch ofsalt
Wet ingredients
2tspany oil(10 g) I used avocado oil, any neutral oil will work
2tspsugar(8 g) I used coconut sugar
2tbsp(nut) milk(30 g) I used unsweetened almond milk
Mix-in
1tbspchocolate chips(15 g)
Instructions
Preheat oven to 350F and line a cookie sheet with parchment.
In a medium bowl whisk together all dry ingredients (you can just use a fork). Add oil, sugar, mix. Add enough milk gradually to form a cookie dough. If it gets too wet, add some more flour.
Mix in the chocolate chips.
Make rounds of cookie dough between your palms, flatten gently and place on the baking sheet.
Bake for 12-14 minutes until the cookies are slightly golden. Let them cool completely (they will firm up as they cool).
