Equipment

  • 1/2 cup ramekin or similar

Ingredients

  • 1 tbsp nut/seed butter (16 g) I used almond butter
  • 1 tbsp maple syrup (21 g)
  • 1 tbsp flour (7 g) gf all purpose if desired, I used oat flour
  • 1/4 tsp baking powder
  • drop of vanilla extract
  • pinch of salt
  • 1/2 tbsp cocoa powder (3 g)

Mix-in and topping

  • 1 oreo cookie vegan, gf if desired
  • (optional) chocolate chips

Instructions

  • Preheat oven to 350F and grease an oven safe ramekin.
  • In a small bowl mix nut butter, maple syrup, flour, baking powder, vanilla, salt. The batter should be spreadable like brownie batter. If not add 1/2 tsp water at a time and mix until it is spreadable. Spread half the batter into your ramekin.
  • Gently press the cookie on top.
  • Add cocoa powder to the rest of your batter and mix until combined. If too dry add a drop of water and mix again.
  • Spread the brownie batter on top of the oreo.
  • Optionally top with some chocolate chips.
  • Bake 15 minutes (see notes for microwave instructions), let your brownie cool for a few minutes and enjoy!

Notes

  • If microwaving, try 30 sec at a time making sure not to let it burn. Stop microwaving as soon as it stops rising.
  • Make this keto easily by substituting sugar free maple syrup and a keto friendly cookie.
  • If you want an amazing ice cream treat, make a coffee protein ninja creami and use this as a mix-in!
