Crazy Easy Single-serving Brownie

Equipment

  • 1/2 cup ramekin or similar

Ingredients

  • 1 tbsp nut/seed butter (16 g) I used almond butter from costco
  • 1 tbsp maple syrup (21 g)
  • 1 tbsp cocoa powder (6 g)
  • 1/4 tsp baking powder
  • drop of vanilla extract
  • pinch of salt
  • (optional) chocolate chips

Instructions

  • Preheat oven to 350F and grease an oven safe ramekin.
  • In a small bowl mix and blend all the ingredients. The batter should be spreadable like brownie batter. If not add 1/2 tsp water at a time and mix until it is spreadable. You should need at most 1 tsp.
  • Transfer to the greased ramekin and optionally top with some chocolate.
  • Bake 15 minutes (see notes for microwave instructions), let your brownie cool for a few minutes and enjoy!

Notes

  • If microwaving, try 30 sec at a time making sure not to let it burn. Stop microwaving as soon as it stops rising. 
  • Make this keto easily by substituting sugar free maple syrup.
