Black Bean Brownies

Fiber-rich yet decadent brownies.

Equipment

  • food processor or blender

Ingredients

  • 1 15 oz can black beans, drained and rinsed
  • 3 tbsp (plant) butter melted (42 g⁣) sub coconut oil
  • 1 tsp vanilla extract⁣
  • 2 large eggs⁣
  • 2/3 cup sugar (120 g) decrease if this is too much or sub granulated stevia etc.⁣
  • 1/3 cup cocoa powder (30 g⁣)
  • 1 tsp (optional) instant coffee⁣
  • 1/2 tsp baking soda⁣
  • 1/4 tsp salt⁣
  • 1/2 cup chocolate chips (90 g⁣)

Instructions

  • Preheat oven to 350F and line an 8x8 dish with parchment. ⁣
  • Blend beans until smooth. Add butter and vanilla and blend again. ⁣
  • Add the rest of the ingredients pulse to combine.⁣
  • Add chocolate pulse until broken down. ⁣
  • Pour into dish, bake 25 minutes. ⁣
  • Cool in the fridge and slice (I used @cutluxe knives that were gifted to me and they are amaze)⁣.
