Small-batch Two-ingredient Dough Biscuits

Equipment

  • Cookie sheet or similar

Ingredients

  • 1 cup flour (120 g) gf all purpose if desired
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp sugar (4 g)
  • 1 cup thick greek style yogurt (224 g) df alternative if desired
  • 1 tbsp semolina/regular flour for rolling (7 g)
  • (optional) spices like thyme, rosemary, etc.
  • (optional) grated cheese like cheddar

Instructions

  • Preheat oven to 400F and line a baking sheet with parchment.
  • In a medium/large bowl whisk together flour, salt, sugar, baking powder. Add any mix-ins like spices and cheese, if using.
  • Gradually add yogurt (I add about 3/4 of it first) until a shaggy dough forms. You may not need all of the yogurt.
  • Turn dough over on a floured surface, dust with flour. Hardly kneading the dough, shape it into a disk. 
  • Cut whichever way you like, brush with milk or melted butter if you like, and bake 15 minutes.
  • Let biscuits cool one minute and enjoy!!
