Single-serving Cookie Cake

Equipment

  • 1/2 cup ramekin or similar

Ingredients

  • 2 tsp oil (10 g)
  • 2 tsp (nut) milk (10 g)
  • 1 1/2 tsp maple syrup (10 g)
  • 1/4 tsp vanilla extract
  • 2 tbsp flour (15 g) gf all purpose if desired
  • 1/4 tsp baking powder
  • 1 heaping tsp chocolate chips (7 g)

Instructions

  • Preheat oven to 350F and grease a small ramekin.
  • In a bowl, mix together oil, milk, syrup, vanilla well.
  • In a small bowl whisk together flour, baking powder, pinch salt.
  • Whisk the two into cookie dough/batter. It should be pourable, if not add 1/2 tsp additional milk at a time until it is pourable. Sprinkle chocolate chips.
  • Bake 20 min, top with ice cream if you like, and enjoy!
