Single-serving Banana Cake with Easy Chocolate Ganache

Equipment

  • 1/2 cup ramekin or muffin pan

Ingredients

Cake batter

  • 1/2 large ripe banana, mashed (about 60 g)
  • 2-3 tsp (nut) milk
  • 2 tbsp almond flour (14 g)
  • 1 tbsp flax seed meal (7 g) sub regular flour
  • 1/2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • pinch of salt

Easy chocolate ganache

  • 1 tsp tahini (5 g) sub other nut/seed butter
  • 1 tsp maple syrup (7 g)
  • 1/2 tsp cocoa powder
  • 1/2 tsp or more (nut) milk thin to your liking

Instructions

  • Preheat oven to 350F.
  • Prepare the chocolate ganache by mixing together tahini, maple syrup, cocoa powder and 1/2 tsp (or more) milk.
  • Mix all other ingredients in a bowl, adding milk 1 tsp at a time until you reach a cake batter consistency. Transfer to greased ramekin or muffin pan cavity.
  • Bake 20-25 min, top with the sauce while the cake is still hot. Enjoy!

Notes

  • As mentioned, you can make this in the microwave but the rise will be much less epic.
