Mini-batch Chocolate Chip Cookies

Ingredients

  • 1 tbsp coconut oil, melted (15 g) sub (plant) butter
  • 1 tbsp maple syrup (21 g)
  • 1/4 tsp vanilla extract
  • 1/4 cup flour (30 g) gf all purpose if desired
  • 1/4 tsp baking powder
  • pinch of salt
  • 1 tbsp chocolate chips (15 g)

Instructions

  • Preheat oven to 350F and line a cookie sheet with parchment.
  • In a bowl, mix, oil, syrup, vanilla until blended.
  • In a mug/bowl, whisk together flour, salt, baking powder.
  • Gradually add dry to wet and stir, stopping as soon as a soft, non-sticky cookie dough forms (you might not need all the dry mix). Fold in chocolate.
  • Shape into 3 balls, flatten gently, bake 12 mins.
  • Let cookies cool and enjoy!
