Easy Chocolate Button Cookies

Ingredients

  • 1/4 cup nut/seed butter (64 g) I use almond butter, Kirkland brand from Costco.
  • 1/4 cup maple syrup (84 g)
  • 1/4 cup oat flour (30 g)
  • 1/4 cup quick oats (20 g) pulse regular oats in a food processor if you don't have this.
  • 2 tbsp cocoa powder (12 g)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 12 pieces chocolate (60 g) df if desired

Instructions

  • Preheat oven to 350F and line a cookie sheet with parchment.
  • In a bowl mix together nut butter, maple syrup, vanilla extract.
  • In another bowl whisk together flour, oats, cocoa powder, baking powder, salt.
  • Combine the two into a cookie dough. If too dry add some nut milk or water 1 tbsp at a time.
  • Shape into walnut sized cookies and shape between your palms, flatten gently.
  • Bake 15 minutes and press a piece of chocolate on each cookie immediately.
  • Let these cool, firm up and enjoy!
