No-bake Nanaimo Bars

Equipment

  • Standard loaf pan

Ingredients

  • 1/4 cup chocolate chopped/chips (60 g)
  • 1/4 cup nut/seed butter (64 g)
  • 4 graham cracker sheets (or similar biscuits) crumbled (62 g) you can use a food processor for this
  • 1/4 cup desiccated coconut (30 g)
  • 1/4 cup chopped walnuts/pecans (30 g)
  • 1/2 cup milk or nut milk (120 g) I use unsweetened almond milk
  • 1/4 package instant vanilla pudding mix (26 g)
  • 1 tbsp coconut oil (15 g)
  • 1 tbsp nut/seed butter (16 g)
  • 2 tbsp chocolate chopped/chips (30 g)

Instructions

  • Line a loaf pan with parchment and grease with spray oil.
  • Melt chocolate and nut butter until smooth (I use the microwave).
  • Add graham crumbs, coconut, walnuts and press into pan.
  • Mix together milk and pudding mix 3-5 min until thickens (I use a hand mixer).
  • Pour into pan, let it set in the fridge.
  • Melt coconut oil, nut butter, chocolate ingredients in the microwave until smooth.
  • Pour into pan, even out, freeze until everything sets, at least a few hours.
  • Slice and enjoy!
