Small-batch Magic Bars

Equipment

  • Standard loaf pan

Ingredients

  • 1 cup oats (80 g)
  • 1/2 cup walnuts (60 g) sub other nuts/seeds
  • 1/4 cup sugar (48 g)
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/3 cup coconut milk, divided (80 g) sub heavy cream or condensed milk
  • 1/3 cup chocolate chips (60 g)
  • 1/4 cup coconut flakes (20 g)

Instructions

  • Preheat oven to 350F and line your loaf pan with parchment (I spray with oil first so the parchment sticks).
  • Process oats, nuts, sugar, cinnamon, salt until a fine meal forms.
  • Add half the coconut milk and process until a dough forms.
  • Press dough into the pan.
  • Sprinkle chocolate chips and coconut flakes (I crushed them with my hands).
  • Drizzle the rest of the coconut milk.
  • Bake 25 mins until coconut is all toasted.
  • Cool completely and slice. Enjoy!

Notes

  • I originally made these with 2 tbsp sugar but wrote the recipe with 1/4 cup. They were sweet enough for me so if you're like me and enjoy a milder sweet taste, go ahead and reduce sugar to 2 tbsp!
