Small-batch Fudgy Brownie Muffins

Ingredients

  • 1 ripe banana, mashed (120 g⁣) sub 1/2 cup pumpkin puree or applesauce
  • 2 tbsp nut/seed butter (32 g⁣) sub melted butter or oil
  • 2 tbsp sugar (24 g⁣) sub granulated sweetener
  • 2 tbsp cocoa powder (12 g⁣)
  • 1/4 tsp vanilla extract
  • 1/4 cup flour (30 g)⁣ gf all purpose if desired
  • 1/2 tsp baking powder⁣
  • pinch of salt
  • 2 tbsp chocolate chips (30 g)

Instructions

  • Preheat oven to 350F and grease a muffin pan or add liners (I made 6 brownie muffins).⁣
  • Mix all but chocolate in a bowl, the batter should be thick but spreadable, if not add 1-2 tsp water.
  • Transfer to the muffin pan, sprinkle the chocolate chips.
  • Bake 20-25 minutes, less for fudgier brownies. Cool completely.⁣ Enjoy!
