Easy Coffee Cake

Ingredients

Cake batter

  • 1 large egg
  • 1/2 cup (nut) milk (120 g) I used unsweetened almond milk
  • 1/2 cup applesauce (120 g) I used unsweetened, sub mashed banana
  • 1/4 cup sugar (48 g)
  • 1 tsp vanilla extract
  • 2 tbsp oil, or butter melted (28 g) I used avocado oil
  • 1 1/2 cup flour (180 g) gf all purpose if desired
  • 1 1/2 tsp baking powder
  • 1/4 tsp sea salt

Cinnamon sugar layer

  • 1/4 cup sugar (48 g) brown or coconut sugar works best
  • 1 tsp ground cinnamon
  • 1 tbsp (plant) butter, melted (14 g)

Instructions

  • Preheat oven to 350F and grease an 8×8 baking dish.
  • Start preparing the cinnamon layer by combining coconut sugar and cinnamon.
  • Beat the egg and mix with milk, applesauce, sugar, oil, vanilla.
  • Whisk together flour, baking powder, salt and fold in the wet ingredients.
  • Pour half the batter into the dish, sprinkle with half the cinnamon layer, pour the other half on top and sprinkle the rest of the cinnamon layer.
  • Drizzle the melted butter on top.
  • Bake for 20 minutes, let it cool and enjoy!
