Mini-batch Cookie Dough Bites

Ingredients

  • 2 tbsp nut/seed butter (32 g)
  • 2 tbsp maple syrup (42 g)
  • 1/3 cup oat flour (40 g) or regular flour, heat treated
  • drop of vanilla
  • pinch of salt
  • 1 tbsp chocolate chips (14 g)

Instructions

  • In a small bowl add nut butter and maple syrup and mix to combine (gently warming in the microwave helps if your nut butter is thick).
  • Add oat flour, vanilla, salt and mix to combine into a non-sticky cookie dough. If too dry, add a drop of water, if too wet, add a pinch more flour.
  • Fold in chocolate chips and press between two pieces of parchment paper (honestly you can give this any shape you prefer).
  • Freeze at least 30 min until set, take out of the freezer and chop into cookie dough bites.
  • Enjoy as cookie dough bites on your ice cream or yogurt bowl, etc, and keep the rest frozen!

Notes

If you don't have oat flour on hand, you can use heat treated flour which you can make with regular flour in the microwave!
