1ripe banana, mashed(120 g) about 1/2 cup, you can sub applesauce, pumpkin puree or even sweet potato puree
1/4cupnut/seed butter(64 g)
1/4cupsugar(48 g)
1/4cupcocoa powder(24 g)
1/4cupprotein powder, or flour(30 g) gf and df if desired
1/4tspbaking powder
1/2tspvanilla extract
1/8tspsalt
1/4cupchocolate chips(45 g)
Instructions
Preheat oven to 350F and line a standard loaf pan (or similar size baking dish) with parchment.
In a medium bowl mash your banana and mix with everything else but chocolate chips.
If the batter is too dry add 1 tsp water or milk at a time to make it pourable and spreadable. It should resemble brownie batter. Fold in chocolate chips.
Pour into pan and bake 20 minutes or so until the edges are done and the middle is springy to touch.
Let bars cool completely (ideally refrigerate overnight) and slice into fudgy squares. Keep refrigerated!
Notes
If not using a food scale, use the spoon & level technique to measure your flour to avoid over-packing the flour which will lead to dry baked goods.
The recipe as written is not overly sweet and is perfect for snacks. If you prefer dessert brownies, add an extra 1/4 cup of sugar or other granulated sweetener.
