These homemade treats have basically 3 ingredients: coconut, chocolate and maple syrup!
Hard to believe these bars are so wholesome, because they bring back some not-so-awesome memories of being a teen. All I remember is this: I got a little allowance to buy lunch right? Hereās what I did instead: Save my cash for clothes that my parents couldnāt afford, and eat some (Turkey-equivalent-of) Bounty or Twix bars instead š¬ I was like, Iāll get skinny and have skinny jeans to wear: WIN WIN š Instead what happened was I came home STARVING, binged the F out, became overweight… Brilliant š
I mean I was a pretty smart kid, but I still did this sh*t. A lot was going on. Lack of information (I didnāt know how food works AT ALL), depression, underdeveloped brain and impulse control. At least two of those things could have been helped with, which is why I talk to my 3-yo about which foods are satiating, which foods make you grow, which foods give you instant energy and the importance of eating these things in a balanced way 3 times a day and try to model it via my own behavior.

Super Easy Bounty Bars
Equipment
- Standard loaf pan
- food processor or blender
Ingredients
- 1 1/3 cup shredded coconut, divided (120 g)
- 2 tbsp coconut oil (30 g)
- 2 tbsp maple syrup (42 g)
Chocolate coating
- 1/2 cup chocolate chips (90 g)
- 2 tsp coconut oil (10 g)
Instructions
- In a blender process 2/3 cup (60 g) coconut into coconut butter.
- Add the oil and syrup and blend more until mostly smooth.
- Add the remaining coconut and stir until cookie dough like.
- Press into pan with parchment and freeze about 1 hour.
- Take out and slice into 18 bars, keep frozen.
- Melt chocolate and oil together and dip bars in the mixture. There will be chocolate left to use later.
- Freeze again a few minutes to set and enjoy! Keep any leftovers frozen or refrigerated.
