One of my guilty pleasures is watching fitness influencers and bodybuilders on YouTube. I’m always fascinated by their intense workouts and disciplined diets. But one thing that always throws me for a loop is their love of Rice Krispies Treats.
Apparently, these sugary snacks are a gym-goer staple. They provide a quick source of carbs and energy, perfect for fueling a workout when you haven’t had time to meal prep your broccoli, chicken, and rice (do they still do that?).
So, with those gym bros and bro-ettes in mind, I decided to create a protein-packed version of this classic treat. Because what makes a fitness enthusiast happier than a dose of extra protein?
And let me tell you, these Mini-Batch Protein Rice Krispies Treats are a winner. They’re chewy, gooey, and packed with that satisfying crunch. Plus, they’ve got a hidden boost of protein to help those muscles recover and rebuild.
The Festive Twist:
Since I made these during the holiday season, they ended up with a festive vibe. I added some crushed candy canes for a peppermint crunch and a touch of red and white swirl. (And hey, what are candy canes if not also a quick and easy source of carbs and energy? Perfect for fueling those holiday shopping sprees!)

These treats are packed with protein, thanks to the addition of protein powder. It’s a great way to sneak in some extra protein without sacrificing flavor.

Small-batch Protein Rice Krispies Treats
Equipment
- Standard loaf pan
Ingredients
Protein rice crispy treat layer
- 2 tbsp (plant) butter (28 g) sub nut/seed butter or any neutral oil
- 2 1/2 cups chopped/mini marshmallows (125 g)
- 1 scoop your fav protein, vegan if desired (30 g) I used CSE white chocolate peppermint
- 3 cups any cereal (105 g) I used Three Wishes for extra protein
Chocolate layer
- 1/2 cup chocolate chips (90 g)
- 2 tsp any oil (10 g) I used avocado oil
- (optional) crushed candy cane
Instructions
- Line a standard loaf pan with parchment paper and set aside.
- In a medium pan melt your butter on low heat. Add marshmallows and stir until combined and melted.
- Turn the heat off and add your protein and stir it all together. Add your cereal, stir to combine until all cereal is stuck together.
- Press into your loaf pan and freeze or refrigerate to set.
- Melt your chocolate and oil together in 30 sec increments in the microwave, stir in between until all chocolate is melted.
- Drizzle on the bars, (optional) sprinkle with crushed candy cane, freeze or refrigerate to set.
- Slice and enjoy!
