This was me healthy-fying and small-batching this recipe right here.
The original recipe itself seems pretty healthy honestly so not sure why I cut the calories so low but whatever I ended up making back then tasted pretty dang good.
And have been made and enjoyed by readers for years.
So it belongs in the blog while I go ahead and mini-batch the “unhealthy” version and rave about it soon š
In the meantime let me know if you try this macro/calorie/skinny/whatever friendly treat. It might just be the thing to scratch the itch!
Small-batch No-bake Chocolate Oat Bars
Servings: 8 squares
Calories: 166kcal
Equipment
- Standard loaf pan or muffin pan
Ingredients
- 1/4 cup applesauce (60 g) I used unsweetened
- 1 tbsp coconut oil, melted (14 g) sub (plant) butter
- 1 tbsp maple syrup (21 g)
- drop of vanilla extract
- pinch of salt
- 1 1/2 cup quick oats (120 g) you can process rolled oats in a food processor to make this at home
- 1/3 cup chocolate chips (60 g)
- 1/4 cup nut/seed butter (64 g)
Instructions
- Line a standard loaf pan with parchment (or use muffin pan/liners).
- In a bowl melt coconut oil (I use the microwave) blend with maple syrup and then add applesauce, vanilla, salt and mix.
- Add oats and stir until all oats are coated. Press 2/3 of this on the bottom of your pan. Set the rest aside.
- In a bowl add chocolate and nut butter. Microwave 30 sec at a time and stir until all chocolate is melted.
- Pour chocolate mix on the pressed oatmeal dough and sprinkle the rest of the oatmeal dough on top, tucking it into the chocolate gently.
- Freeze or refrigerate until chocolate is set. Slice and enjoy with a little sprinkle of coarse salt!
