You’re going to love these easy and ultra-soft muffins if you love the combo of cinnamon sugar and butter. And who doesn’t love that?
Apparently not the cast of the show The Summer I Turned Pretty which I absolutely binged, no shame, and when I was done with the season I naturally went to the internets to find more content.
You can only imagine my excitement when I found a bunch of them baking? And they made muffins? What! I live for muffins!
Btw – I swear I watched a Youtube video which I cannot find right now and being a Google Search engineer and all you can understand how frustrating this is, I’m about to have a panic attack over it so please link it to me if you know how to get to it!
Well I don’t really live for muffins but you know what I mean. So I had to look these “dirt bomb” muffins up and make my small-batch version for our small-batch needs for a mini-batch family of 3. I actually ended up with 6 muffins and took them to a pot-lock thing along with some cookies.
They disappeared so fast and I was amazed that my picky 6yo asked for a second! Serves me right for making a small-batch. So yeah I came home and made more.
It turns out these amazing dirt bomb muffins originated from a bakery in Massachusetts, so that’s another cool tidbit. I’ll def end up there some time soon. I’ll let you know what I think!

Small-batch Dirt Bombs
Equipment
- Muffin pan
Ingredients
- 1/2 ripe banana, mashed (60 g) this is your egg replacer, trust me, if you hate bananas sub 1/4 cup applesauce or 1 flax egg
- 1/3 cup (nut) milk or water (80 g) I used unsweetened almond milk
- 1/4 cup (plant) butter, melted (56 g) sub nut/seed butter, oil or even yogurt
- 1/4 cup sugar (48 g) or sweetener
- 1/4 tsp vanilla extract
- 1 cup flour (120 g) gf all purpose if desired
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
Dirt bomb coating
- 2 tbsp (plant) butter, melted (28 g) you can sub coconut oil
- 1/4 cup sugar (48 g)
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350F and grease or line a muffin pan with liners.
- Soften your butter in the microwave (don't let it melt the whole way). Beat in sugar, banana/applesauce, milk, vanilla until smooth.
- Whisk together flour, baking powder, baking soda, salt, and fold into the wet mixture (do not overmix). Transfer to muffin pan.
- Bake 20-25 minutes until centers are done, cool completely.
- In a small bowl melt your butter. In a separate bowl whisk your sugar and cinnamon. Dip each muffin in the melted butter and immediately dip in the cinnamon sugar.
- Let this coating set and enjoy!! I took mine to a friend get together and it was awesome!
Notes
- To make a flax egg, stir together 1 tbsp (7 g) flax seed meal and 3 tbsp water and let it sit and thicken for 5 minutes.
